Enfes Pide is a Black Sea pide restaurant in Yomra Kaşüstü, Trabzon — a short drive from Trabzon Airport. We bake open (yaprak), closed (kapalı) and round (yuvarlak) pide in a traditional wood-fired stone oven, with daily-rolled dough and real butter. Our menu features 22 pide varieties plus thin-dough lahmacun.
Why is Trabzon stone-oven pide different?
The stone oven reaches 380°C through wood-fire heat stored in natural stone plates. Dough touches the hot stone and forms an instant crust — that's what gives our pide its crispy edges and tender centre. Electric ovens move heat through circulating air; stone ovens cook by contact. Which pide should you pick?
Three main forms: open (yaprak) is thin and light — classic minced beef with kashar cheese is the most popular. Closed (kapalı) seals the filling inside the dough — kapalı kavurmalı kaşarlı (slow-cooked beef confit + kashar) is our signature. Round (yuvarlak) is thicker and very filling.
